In other news, I’ve still been baking away (and have even made a couple batches of (near) midnight granola in the past couple weeks). But what I really want to talk about is these cinnamon almond flour coconut bites. I haven’t had a macaroon in a long while, but from what I can remember, these little gems bare a great resemblance to the traditional coconut treats. But better. Fresh from the oven they have a nice crispy outer shell, while the inside is dense and chewy, with a very satisfying bite. The almond flour lends a complex and deeply nutty flavor, while the brown rice syrup provides a malty sweetness that perfectly complements the toasted coconut.
The flavor combinations with these bites are limited only by your imagination. I chose to make a warming cinnamon version, but cocoa powder, freeze dried fruit, sesame seeds, or anything else you can think of would all make wonderful additions. These little coconut bites are perfect for a quick snack, crumbled over oatmeal in the morning, and even for dessert (with melted chocolate, in sandwich form?!)

Ingredients Instructions Preheat oven to 325°F. Line a baking sheet with parchment paper.
In a medium bowl, mix together brown rice syrup, coconut oil, and applesauce until homogenous.
Pour in almond flour, desiccated coconut, oat flour, rolled oats, cinnamon, and salt. Stir together until the dry ingredients are well coated. The batter will be quite sticky.
Scoop the batter by rounded tablespoonfuls onto the parchment paper, leaving an inch between each.
Bake for 25-28 minutes, until edges are golden. Allow to cool on pan for 5 minutes before transferring to a wire rack to cool completely. Notes *Make your own oat flour by simply grinding rolled oats in a food processor until they are the consistency of flour. One cup of rolled oats should give you slightly less than one cup of oat flour. You may substitute cocoa powder for ground cinnamon in an equal amount. Additional add in ideas: cocoa nibs, chocolate chips, freeze dried fruit, sesame or sunflower seeds.

yep, I pretty much LOVE everything about these bites! coconut oil, coconut, almond flour, cinnamon – these are wonderful! I don’t think I could stop snacking on them, especially if I kept them on hand as a healthy snack at my desk.

I would like to try almond flour as part of a crust for lemon bars.
Since being diagnosed with celiac I am having a hard time finding yummy healthy baked sweets and breads. I would LOVE to experiment with almond flour to bake pies, cookies, breads, etc.
I know there are a lot of great recipes for gluten free baked good using almond flour floating around the web. I hope you try these little gems. I can assure you they’re very tasty!

Mmmm these look really good! One of the recipes I make all the time when I’m not too lazy to grind up my almonds myself is my almond cake that only uses egg whites, almond flour and honey! I first came up with it when my mom wanted a healthy birthday cake. Everyone loves it!

I know my fiance sometimes has some donut cravings, but hasn’t had one since she was diagnosed celiac 5 years ago. I’ve heard almond flour makes very good GF donuts. I’d like to give that a try.

It’s funny but I really don’t like coconut but I love baking with coconut flour, oil and flakes. These look great!
Almond flour is so wonderful, but I’ve definitely neglected it lately. It’s been quite a while since I baked with it last. To break this sad streak, I think I’d start with a batch of either muffins or pancakes. Not sure why, but I’ve really been feeling the breakfast treats lately.

I would use the almond flour in so many recipes! Since becoming gluten-free I’ve searched and searched for alternatives to “regular” flour. Almond has become a favorite of mine. The first thing I would make though would be a batch of almond chocolate chip cookies. I’ve been craving them!
